Just ordered the 180 ... Why since I already own TWO PASTA MACHINES? Been trained since a small child ... Italian kids learn early and thank God I did! I am advancing my experiences to making homemade Sfyotiella for this Christmas. The 180 will make a wider dough roll which equals more final quantitied of the heavenly pastry which will assured become another MUST HOLIDAY TRADITION! YouTube videos has put the bug in me to add this unique Italian pastry to our already traditional favorites. Hey beginners ... Forget those negative reviews, unless the machine was defective. You are missing out of ... Fresh ... Pasta ... Ravioli ... Fettuccine ... Canolli ... And soon to be Sfyotiella! (if you don't know what that is? Google it! ... Your taste buds will thank you) Of course you must have a learning curve because it is ALL ABOUT knowing the consistency of your dough for repeated success! General rule is... Too wet ... Add flour ... Dryer is always better! AN Italian SECRET PASTA RECIPE 1 Cup Simolina (as my mother used to say, it makes the pasta firmer and easier to handle... She's dead on right) 1 Cup Flour 1 to 2 eggs 1 Tbl Olive Oil 1/4 Tsp Salt Mix the dry ingredients with a fork or whisk. Make a well in the center. Beat the wet ingredients with a fork then pour into the well of the dry ingredients. Remove finger jewelry (rings) will get dirty. Use one hand and begin combining the ingredients until it becomes combined into a ball with a mix of crumbs and flour dust. Pour the ingredients onto a clean floured surface and begin using both hands to further combine all of the ingredients and knead into one uniform ball. Continue kneading and it will take about 10 minutes total time to get it ready to wrap with plastic wrap. After mixing the ingredients ... Wrap and Rest the dough for min of 30 minutes (at room temp) which allows the flour to absorb the liquid and the dough will become slightly softer after the resting time. NOW THE FUN BEGINS AND YOU WILL SEE LIGHT AT THE END OF THE TUNNELL ... First work with pieces no larger than QUARTER CHUNKS of the dough ball. Press the chunk with your hand down as flat as you possibly can that will feed into your widest machine setting. Run through the machine then fold over into THIRDS and feed the folds end then repeat. The trick is begin by repeatedly folding the dough into thirds at the widest machine setting until the rolled dough on the widest setting appears UNIFORM AND SMOOTH! This will be about 4 to 5 times ... Be patient your taste buds will be glad! This also helps develop the elastic gluten making your pasta more plyable ... "authentic!" Continue to lower the setting one pass at a time till the thickness is to your liking. Then flour both sides of the surface lightly before running the thin dough sheet through your desired cut shape! TRICK SUGGESTION ... Get one of those shakers with small holes that will make it easier to lightly spread flour to your pasta surface! Lay on a rack, tea towel, or layer of waxed or parchment paper to dry slightly. You can even cook immediately! SUGGESTION ... place the raw cut dough on a metal cookie sheet and FREEZE! Once frozen, place in freezer bags. It will keep for months and you will have the same freshness without all the work. Bon Appetit! As a famous fellow Sicilian once said ... "Leave the gun ... Take the Canolli!
Takes a while to get used to using it, not quite as easy as I was expecting it to be.

I was so curious to figure out where my friends got me a pasta maker so I amazoned 'Pasta Maker' and boom! This came up immediately! How sweet that they would spend this much on me... REVIEW: LOVE IT! Read the directions first- that means DO NOT WASH YOUR PASTA MACHINE. I recommend finding a recipe online first and just learning how to dry pasta and store it if you are inexperienced like me, but this baby handles all my kitchen woes. Affordable, durable, and totally awesome. I will most definitely be cooking my famous alfredo, now with homemade pasta to thank them! EDIT 4/18/12 I forgot to mention that there are 2 different settings for pasta variations. There is of course the given flat one that you use to make the dough to your thinness/thickness (and you could use it for lasagna). 1 - will be more like spaghetti noodles and the other 2 - is more like a fettuccine ribbons. Easy to assemble and to clean.
This Atlas Marcato is an excellent Pasta machine! I have owned mine for at least 15 years (not through Amazon) and it has never let me down. Please use the Atlas Marcato pasta machine for how it is intended and not for clay. Thank you, Catt
Great quality but didnt work for me. If you need something like this product, i could call it the best of its class.
This is very nice-high quality and works perfectly! I make the dough using a food processor and then use this. It makes no mess at all and I can have fresh pasta very quickly. The only thing that could be better is the clamp. It doesn't seem to fit right on my standard counter.
I don't have this model but as far as I'm concerned they are all the same. I just wanted to share what I've learned from using my pasta maker. The instructions tell you to make a dough and run it through the rollers so that it can pick up the tiny metal shavings. The metal shavings come from the manufacturing process. I had to make a lot of dough to get all of the shavings out. When I thought they were all out, they were not. Make sure you run the dough from one end to the other and at every numbered setting. I think I used about four batches of dough before all of the shavings were gone. It is important that you run the dough in the corners. A lot of shavings hide there! I've also found that using a food processor is the easiest way to go to make the dough. I have a kitchen aid but I wasn't satisfied with it. When you use a food processor, put all of the liquid ingredients in first then add about 3/4 of the required flour. When it rolls into a ball, take it out and work the remaining flour in. Often you wouldn't need to use all of the flour. I've also seen recipes where they say you have to wrap the dough in plastic and let it rest. I live in a very humid country and the dough just sucks up water. It's as if no flour is in it. Instead, I just roll the dough. Hope this information helps.
I bought this pasta maker, made sure it was "made in Italy" I found it very easy to use. My noodles turned out great the very first time! My husband could not get enough. This is a small unit, fits right in my corner ready to use again soon! I would buy this all over again if needed, BUT it seems like it will last a life time, good sturdy unit.
My son is elated with his new Wellness 150 Pasta Maker and is trying out all different kinds of pasta. This is a very sturdy piece of equipment and I'm looking forward to sampling his pasta!

I bought this machine with some trepidation, knowing that I would be attempting to run gluten-free dough through it. The first recipe that I tried was a little difficult, but then I tried Bette Hagman's recipe for Bean Flour Pasta (The Gluten-Free Gourmet, revised edition). It works very well with this machine. Now I can have fresh pasta without having to hand-roll and cut it. The machine itself appears to be very strong and well-built. The clamp mechanism could be a little better, but it works okay with my island. I definitely recommend it.
Bought the 180 yesterday. As this is my first pasta maker, I planned to spend all afternoon in Pasta Laboratory, but the first batch was good, the second better, the third (which was dinner, tossed with Marcela Hazan's pink shrimp sauce with cream) perfect. Just be patient and careful about adding flour to your eggs---you want just enough to keep the dough from sticking to your hands and counter as you knead, and not a dash more. I found I needed to add a bit of flour now and again as I kneaded. Ignore precise flour-to-egg ratios, as the amount of flour required will depend on the size and temp of your eggs, the humidity in your kitchen, and the nature of your flour. Go by touch. If making the dough is easy, this machine makes the rest idiot-proof (just remember that if you've rolled the pasta on the thinnest setting, it will cook in two minutes or less). It's heavy, attractive, and well-made. I fully expect to leave it to charity or a child when I depart. But do ignore Amazon's product title! The machine is not made of stainless still, and will not take kindly to water. Just sweep it with a basting brush reserved for the purpose.

I had been making home made pasta and it was quite good but I had the hardest time getting it thin enough, I could but it was just so much work. I posed a question to my cooking group and they said get some kind of pasta machine. They all had recommendations but basically only two, the Atlas Original and the Imperza. As I researched them, there didn't seem to be much difference between them, both high quality and both made in Italy. I bought the Atlas because it had free shipping on Amazon and the Impreza didn't and the Impreza was not supplied by Amazon but another supplier through Amazon. Amazon has a such a great return policy, they even pay for the shipping should you have to return it. So the decision had been made and I ordered it. In the mean time, I went to work designing a system to address everyone's complaint about any of the manual pasta makers, that is the clamp and the necessity to have two people. I don't want my wife in the same town when I make pasta, it looks like flour wars when I am through, but it is all cleaned up by the time she comes back. I bought a board at Walmart for $[...] and I had everything else I needed. I hope this picture comes through if not I am also going to give the actual address that can be viewed in your browser. [...] With the saving on the shipping I bought Cooks Illustrated Pasta and Noodle instruction book, in my life time I would never get through all these recipes. Bascially I use their recipe for pasta, 3 cups of APF and 3 eggs, today I used 4 cups of flour and 4 eggs, simple enough, the extra cup was whole wheat, I have never done this before, so I don't know how it will work, I think it will be good. Whole wheat is somewhat harder to work with, but I suspect you would get the knack after a couple of trys. I like working with the dough so this is just what I wanted and it looks like it will get passed down, really built well. If you want a pasta maker and don't mind hand making the pasta as opposed to the machines that basically mix the pasta and extrude the pasta, this is a very nice choice. I haven't tried the cheaper ones, it is possible you could get lucky, but I wouldn't mess around and get the real deal, you won't be sorry.

Great machine - well built, sturdy and simple enough to be around for many years! The only draw back is can only do fettuccine and tagliolini with the dies included. I would rather have seen a spaghetti or linguine cutter but that is my preference as I think more people in the US use those shapes more. The flip side is those cutters are available as an additional purchase (but they are not cheap!) Also, a tip on flour for the actual pasta: use a semolina flour like Bob's Red Mill. It is more expensive but makes a world of difference!!!! All in all, great machine - I'll be using it for a while (after I get the linguine cutter!)
I bought this product twice sine I love it so much. Ok so simple recipe for noodles. 4 eggs 2.25 cups of flour (we use all purpose unbleached) Mix them together for 15 minutes or use a kitchenaid mixer to save time. Then take dough and split in half. Next flatten dough into flat and dust the dough with a teaspoon of flour each side so it wont stick. Use the machine to flatten then cut. We like size 3 for big fettuccini noudles. We highly recommend this product. Also never get the atlas machine wet. Seriously you dont half to clean it. Just blow out the flour and you are good to go.
I've owned this pasta maker for a couple years. Until I got this, I could never successfully make pasta. I know you can roll out the dough by hand because I've seen great cooks do that, but I was unable to. It always rolled out to be too thick, rubbery, torn, etc. The quality of this machine is amazing for the price. I have no idea how they can build such a sturdy, quality product for $70. Not that that's not a lot of money because it is, but when you get this machine, you'll see that it could easily cost double. This machine was a game changer. Even dough that's not perfect will still roll out perfectly. When I make lasagna, its almost easier to just make the pasta homemade than to pre boil dry pasta. Highly recommended
I LOVE this pasta maker!!! My kids come in the kitchen with me to make pasta now. This machine is well made and makes the pasta dough turn out perfect every time with all of the different flavors and flour. We make pasta atleast once a week now. This is my new favorite tool.
I am not Italian, nor have I ever had much interest in pasta...Well I always bought it out of a bag at the grocery store ,it wasn't to good to my palate or my friends...so I am learning to make fresh pasta...the problem is not the machine as it is a solid piece of metal and does what it says it will do...the problem is with me making the dough... ...however you must be able to make a dough that will work...ha ha I am working on that ...The machine is made of good steel and works well ...will last a long time ...I will be able to make a dough soon that will work...the dough that I tried was a water and all purpose flour to make ravoli it broke in the ravoli maker I bought also...but think my dough would have worked for everything else the machine does...Hey I am not putting this machine down as it is constructed of heavy metal and will last me a lifetime and pass on to kids and then to grandkids ...the pasta maker is not the problem...I need to learn to make a dough...I have bought many items from Amazon ...I think if you love to cook like I do you cannot go wrong with this machine as it is awesome,and does what it says it will do...I have had some pasta from it and fresh is better...who knew...I did't...sorry don't know what to call the stuff I made as it was like a spaghetti as the strands were thicker and then I made an angel hair I think ...fresh is better and I am not Italian ...I live in the south and have begun to think of ways to make dumplings ...or maybe some apple pies...hey this thing is awesome and let the mind take you away to a food frenzy of delight only your pocket book will stop you cold...but this item is priced right as it will last a long time.I haved told you my experience with the machine I bought and my expectations ...yours may be different ...but I am totally happy with my purchase
I LOVE this product. It really is a no brainer to use. It takes a few times to get the hang of it, but once you do it is smooth sailing. My trick to to keep it from moving, is put a dish cloth under the atlas, and wrap it underneath the table, and then then put the wrench thingy (No clue what its called) over that. The towel will give it the resistance and friction that it needs to stay in place. Fresh pasta tastes so much better than boxed pasta. I have been making mine with white spelt flour and its fantastic. ENJOY!

Grinds coffee quickly i wouldn't say the grind is even but it gets the job done. It can be pretty loud i wouldn't use it while anyone was sleeping!
Use a burr grinder for coffee, you noob! This works great for herbs.
i've used krups grinders exclusively since i first learned to grind my own beans, and have never had a complaint. it's a great design, doesn't take up too much counter space, grinds even a full load of beans well, and the price is great. over time they do wear out, but they last for years and years. i had to outfit two apartments this year, and they both have krups grinders.
This grinder has made my coffee daily for the last year. It is a very reliable and useful little kitchen accessory.

This is the noisiest coffee grinder I have ever heard. Takes a while to gind beans fine enough for a drip machine. Other than that it's OK.
